    10 great places to sample local food and wine

    November 11, 2010 | USA Today

    Chef Sean Brock, who was named best chef in the Southeast in this year’s James Beard Awards, raises, butchers and smokes his own hogs. “Brock’s really kind of a missionary for real Southern cuisine,” Jacobsen says. His newest restaurant, which opened earlier this week, doesn’t even use olive oil because it doesn’t come from the South. 843-577-2500;

    Eat This Tonight: Cornbread, Truffles, and Macaroni

    November 12, 2010 | Charleston City Paper

    Local foodies have their plates full this weekend. The Mac-Off, Charleston’s first macaroni and cheese cook off, is tonight, while FIG’s Truffle Week has been going on, well, all week. Chef Sean Brock’s new restaurant Husk opened Monday. Considering it made USA Today’s “10 great places to sample local food and wine” after being open for a whopping four days, the spot is definitely worth a visit.

    Reclaiming the soul of Southern food

    November 10, 2010 | CNN

    Sean Brock wants to serve you the Southern meal of your dreams. He just needs to go have a little chat with the earth first.

    His new restaurant Husk opened this week in Charleston, South Carolina, stocked with a pantry of over 4000 lovingly put-up cans of preserved meat and produce (Brock jokes, “We bought up every empty mason jar in the South.”) – and little else. The chef-imposed mandate for the restaurant is: if it doesn’t come from the South, it’s not coming through the door.

    Husk’s opening night seems smooth as silk

    November 10, 2010 | The post & Courier

    It’s 5:30 p.m., and 12 arms are whirling in the kitchen like an agitated octopus. Flipping, stirring, spooning in every direction. The motion never stops.

    Servers head for tables in the upstairs portion of the bar as owners of Coast Brewing Co. Jaime Tenny and husband David Merritt (right) visit Husk on its opening night.
    When it seems no one could possibly move any faster, eight ticket orders spit out of a printer. The tempo quickens. The choreography of the six cooks becomes a blur. Remarkably, there are no collisions.
